How can I delete the Letters from my iPhone/iPad?

Just press and hold the Letter for a while, the Letter will start to shake and a small "x" will appear in the top left corner of the Letter. Press the "x" and the letter is gone.

How can I rearange the Letters on my home screen

Just press and hold the Letter for a while, the Letter will start to shake. Now you can move the letters around your home screen with your finger.
